The Curriculum
Boswellia Serrata: Sacred Resin, Modern Medicine with Michael Gaeta
Known for centuries as frankincense, Boswellia serrata is more than an ancient sacred resin—it is one of the most fascinating bridge herbs between traditional medicine and modern clinical research. In this class, Dr. Michael Gaeta will explore how this remarkable tree resin has been used across Ayurvedic, Unani, African, and biblical traditions, and why it continues to earn attention today for supporting joints, lungs, the gut, the brain, and a healthy inflammatory response.
Students will learn what makes Boswellia so unique, including its key boswellic acids—especially AKBA—and how they influence inflammatory pathways in a way that is distinct from common pain relievers. Unitive Medicine and Neurological Health with Donnie Yance
In this class, Donnie Yance presents a holistic, integrative approach to neurological health through the lens of Unitive Medicine. Focusing on brain aging and neurodegenerative conditions such as Alzheimer’s and Parkinson’s disease, he will explore how the brain is deeply connected to the whole body through the gut-brain-immune axis, the vagus nerve, inflammation, oxidative stress, mitochondrial function, and the body’s capacity for resilience and repair.

Eat Your Medicine: Herbal Support for Common Digestive Complaints with Charlotte Kikel
In this lively and practical class, Charlotte Kikel invites students to rethink what it means to “eat your medicine.” While bioavailability often focuses on how well nutrients or compounds enter the bloodstream, Charlotte will bring the conversation back to the digestive tract itself—where herbs can bathe the mucous membranes, soothe irritation, awaken function, and send important messages throughout the body.
Moving from the mouth to the stomach, intestines, and beyond, this class will explore common digestive complaints and what may be happening when digestion becomes uncomfortable. Charlotte will discuss both strong and gentle herbal remedies, including familiar kitchen medicines as well as less common botanicals, offering practical ways to support the body’s natural digestive intelligence.

Bilberry: An Herbalist's Guide to Vision, Circulation, and Vitality with Dustin Strong
Most practitioners know Bilberry (Vaccinium myrtillus) as a traditional eye-support herb. Few realize its broader impact on microcirculation, capillary integrity, connective tissue health, lymphatic drainage, venous insufficiency, and healthy aging.
In this evidence-informed course, Dustin Strong, CHN, ACN, explores the traditional uses and modern clinical applications of Bilberry, with special attention to its rich anthocyanin content and its role in supporting the body's smallest blood vessels.

Meet Your Instructors
Dr Michael Gaeta, DAc, MS, CDN, CNFMP, BCNFM, Dipl Acu & ABT (NCCAOM), LMT, CAT
Dr Michael Gaeta’s purpose is to co-create a world of vital, resilient people who choose a lifestyle of “nature first, drugs last.” To accomplish this, he treats patients with Chinese and functional medicine, and helps natural health professionals upgrade their patient care and practice success. His teaching is informed by 36 years of successful clinical practice.
Michael holds licenses in acupuncture, dietetics-nutrition, and massage therapy. He is also an herbalist, and a doctor of acupuncture in Rhode Island. He earned his Master of Science degree in acupuncture from the New York College of Health Professions, where he was a faculty member for ten years. Dr Gaeta is Board-Certified in Natural Functional Medicine by the American Association of Natural Wellness Practitioners.
Through the accredited Gaeta Institute for Wholistic Health Education, Dr Gaeta gives live and online trainings in wholistic health, and clinical and business success for practitioners. These include the Clinician’s Mastermind Circle, a one-year Board certification program in natural functional medicine. Since 2020, he has hosted the Mondays with Michael weekly podcast on natural health and health freedom. Dr Gaeta is also active nationally in promoting health choice and informed consent.
Charlotte Kikel, MS, FDN-P, ACN, AHG, EMRS
Charlotte Kikel is a wife, mother, nutritionist, herbalist, lifetime student, and a lover of dark chocolate and all things healing. When her health crashed in 2002 and she realized the medical system couldn’t help her, she started examining what it means to be fully alive.
She studied whole food nutrition at Bauman College in Santa Cruz, CA and then attained a Master of Science degree in Western Herbal Medicine from the Maryland University of Integrative Health. She is a Board-Certified Holistic Nutritionist, Functional Diagnostic Nutritionist, registered as a professional member of the American Herbalist Guild, and currently enrolled in the Electromagnetic Radiation Specialist program at The Building Biology Institute in Santa Fe, New Mexico.
In 2018, Charlotte published her first book, Eat in Peace to Live in Peace: Your Handbook for Vitality. Charlotte now lives happily in Santa Fe, New Mexico, with her husband and son.
Donnie Yance, CN, MH, RH (AHG)
Donnie Yance is a certified nutritionist and master herbalist with over 40 years of clinical experience. He is the founder of the Mederi Center, specializing in integrative care for cancer and chronic illness; the Mederi Academy, providing practitioner education; and Natura Health Products. His work unites traditional medical systems with modern science to support whole- person healing and health optimization. He contributes regularly to his blog at DonnieYance.com.

Dustin Strong is a renowned holistic health clinician, speaker, author, and educator with clients worldwide.
As the Chief Clinician and Founder of the holistic health and wellness center Strong on Health. Mr. Strong has specialized in holistic and applied clinical nutrition for nearly a decade. In addition to his work with private clients, he is an experienced consultant to other healthcare professionals.
